Coconut Lemon Bars

 ¾ cup Pure Ground Oats (base)
 ¾ cup dates (base)
 ¾ cup coconut shreds (base)
1/3 cup melted Pure Coconut Oil (lemon layer)
¼ cup maple syrup or 1 cup dates (lemon layer)
Juice from 1 lemon (lemon layer)
1 or 2 bananas (lemon layer)
1/2 cup coconut shreds (lemon layer)

When life gives you lemons, make lemon bars! For the base, put oats and dates in a food processor and blend until it sticks together. Press the mixture into the bottom of a square baking pan and put in the fridge. For the lemon layer blend all the ingredients until smooth. Spread mixture on the base layer and set in the fridge overnight. The next day, cut into squares and sprinkle coconut flakes on top.
