Oat Burger

2/3 cup Pure Ground Oats
¼ cup coconut oil
8 ounce mushrooms
1 red onion
3 cloves garlic
2 eggs
1 cup shredded parmesan
pinch of salt & pepper

We love these like a fat kid loves… uhm… yeah, burgers. Heat 2 tablespoons of coconut oil in a large skillet over medium heat; add mushrooms, onion, and garlic and season with salt, black pepper, and herbs. Cook and stir until mushrooms have given up their juice and it has almost evaporated. Get the mushrooms out, chop into small chunks and mix the oats in to it in a large bowl. Stir Parmigiano-Reggiano cheese into the mixture, followed by eggs. Leave it alone for about 15 minutes. Pick up about 1/4 cup and form into burgers. Heat remaining coconut oil in a skillet over medium heat and pan-fry burgers in 5 to 6 minutes.
