Roasted Nut Butter Cauliflower
1/2 cup Pure Nut butter
2 tbsp Pure Coconut Oil
4 tsp spices (ginger/kurkuma/curry)
1 squeezed lime (juice)
Handful fresh parsley or coarsely and toasted almonds to top.
In a large bowl, whisk together almond butter, oil and tandoori seasoning. if you find the mixture a little dry squeeze in some lime. Toss the florets into the mixture and coat well. Adjust the top oven rack, so the cauliflower will be about 4-5 inches away from the heat. Preheat the oven for a few minutes on the low broil setting. Meanwhile spread out the cauliflower in a single layer on a foil lined baking pan. Roast under the broiler for 10-12 minutes, until just tender and golden brown. When cooked, sprinkle with sea salt, squeeze lime juice over, and garnish with fresh parsley. For extra crunch top with crushed toasted almonds. Serve hot.
